Butcher Classes

 

With 55 years of industry expertise, Mosner Family Brands is proud to introduce an unrivaled hands-on meat experience with our new butcher classes. Our family welcomes students with a wide range of culinary and carnivorous backgrounds who have passion or simply a curiosity for the art of butchery. Classes are available to the general public as well as food industry professionals. Students will have the opportunity to breakdown carcasses in advanced classes and sub-primals in basic course offerings under the guidance of master butchers in a state of the art USDA-inspected facility at the Hunts Point Cooperative Meat Market, located in the Bronx, NY. Participants can also look forward to advanced cutting demonstrations and insight into industry trends and meat cooking and preparation methods. We will demystify the butcher's meat case and provide you with tips to be a knowledgeable meat consumer for your home or business. The experts at Mosner Family Brands will help you cultivate basic butchery skills, widen your culinary knowledge, and become a more informed, responsible, and conscious meat consumer.

Included in the cost of enrollment, students will have the opportunity to take home the meat they cut throughout the class in storage ready vacuum packaging. Students will also receive a list of suggested recipes and a Certificate of Training upon completion of the course.

 

Advanced classes for food service professionals, chefs, restaurateurs, and caterers are also available. These classes feature highly-detailed meat cutting demonstrations, which are supplemented by discussions on animal husbandry, genetics, breeding, anatomy, sustainability, value and innovative retailing, and menuing opportunities among other topics.

 

Mosner Family Brands will provide all of the necessary equipment upon arrival at our modern production facility. Classes are conducted in a climate controlled environment. Students should come prepared by dressing very warmly in layers of workwear and wearing boots.

 

Course Overview

 

Hands-on meat fabrication, primals to cuts

Flavor fundamentals, understanding grading and labeling

Carcass breakdown, animal anatomy

Cooking and preparation techniques

Basic knife skills, sharpening and cutting techniques

Species may include lamb, pork, chicken, beef, and/or veal

Depart with vacuum sealed, storage ready packaged meat cut during the class

The cost per Advanced Class is $399 per person.
